    Osaka is the easiest city in Japan to eat well in and one of the hardest to bring home. Every dish it is famous for is street food — takoyaki, okonomiyaki, kushikatsu — and street food does not travel. A cooking class is the only souvenir that fits in your luggage.

    What these classes actually are

    Small studios, not hotel function rooms. A chef who works in English. Ingredients prepped in advance so you spend the time cooking rather than chopping. Roughly two hours, and you eat what you made at the end — which is worth checking, because a few classes are tasting-sized rather than meal-sized and people leave hungry.

    Prices run $44 to $100, and the spread is mostly about the meal: a $44 sushi class and a $100 gluten-free ramen class differ in what you eat and how much adaptation the kitchen does, not in how good the teaching is.

    The one practical thing to know

    Book ahead. These studios are small — often eight to twelve places — and the well-reviewed ones fill days out, particularly for evening slots and weekends. This is the opposite of a food tour, where a spare place usually exists somewhere.

    There are exceptions: at least one sushi studio takes same-day bookings, which is the one to look at if you are already in Osaka and improvising.

    Which dish to choose

    • Ramen and gyoza — the most satisfying to have learned, and the hardest to fake at home. Broth is the whole craft.
    • Sushi — the most photogenic, the most technique per minute, and the class most likely to change how you shop for fish.
    • Takoyaki and okonomiyaki — the most Osakan, the most fun, and the most repeatable in a normal kitchen. Okonomiyaki genuinely works on a home hob.

The facilities are clean, tidy and full of everything you need. the cooking is well paced without feeling like you're rushing. for non-Japanese speakers, the staff's level of English is exceptional. We did it in a pair but there was also a family attending the class and it was suitable for children too. This is a memory we won't forget and two recipes that we will be taking home.
